Hubert Salus Simon was born on January 30, 1938 in Mullins, South Carolina to the late Geder and Willie Mae Simon. Hubert attended Palmetto High School in 1957. He married the love of his life, the late Rose Marie Simon, they began a beautiful marriage in South Carolina and shortly thereafter, moved to Jamaica, New York. Their life together spanned 56 years of utter and complete devotion to one another. Through this union, they raised three children; Linda, Willette, and Huey. After the passing of his late wife Rose Simon, Hubert transitioned back home to Mullins, South Carolina.
Hubert worked for KLM Dutch Royal Airlines as a dedicated chef for about 15 years, before advancing onto the Lead Chef position at Varig Airlines where he worked for 10 years. He later moved on to take a position for the New York City Board of Education Food Department where he worked for a number of years. Then, his last job before his retirement was at AirStream Foods where he enjoyed working and socializing. Hubert was a loving and caring person, devoted husband, father, grandfather, great-grandfather, brother, uncle and a friend to many. Always thinking of others first, to know him was to love him. He was passionate about his family, and their happiness, knowing fully that there is no simple path for any of us. His love was unparalleled and he always taught them that good decisions would follow the bad, and all things could be made right. He loved to cook, and most importantly, he loved to watch others enjoy his cooking “Please be at the table on time!” He would say. Hubert enjoyed telling stories, and making others laugh. He was the life of the party. He loved to entertain his friends in his barn (“the man cave”). Hubert and his twin brother Hoyett (“The Simon Boys”) were inseparable since birth and shared life’s blessings together. You would never see one without the other, and with the two of them together there was never a dull moment.
Hubert was also a dedicated and devoted member of St. Paul Baptist Church where also served on the Usher Board, and mentored many young men. Hubert leaves to cherish his loving memory, his children: Linda Henderson (Jerry), Willette Simon-Elam, and Huey J. Simon; five grandchildren: Javon S. Henderson, Andre J. Henderson, Carrie Rose Elam, Taylor Marie Elam, and Kennedy Goodwin; one great grandchild: Mackenzie Rose Henderson. His brothers: Walter Mack Simon (Gloria) and his very special twin brother Hoyett P. Simon and his children Sandra D. Simon and Yvette Williamson (Steven III), and a host of nieces, nephews, cousins, family and friends.
